Ingredients for salmon with zesty mango salsa on brown rice
4 salmon fillets (150g each)
2 large mangoes
1 red bell pepper
1 small red onion
1 lime or lemon
2 cups brown rice
300g green beans
2 tablespoons olive oil
Salt to taste
Black pepper to taste
2 tablespoons fresh cilantro (optional)
Directions
Step 1 – Cook the brown rice Rinse rice under cold water. In a pot, bring 4 cups of water to a boil, add rice and a pinch of salt. Reduce heat, cover, and simmer for 45 minutes or until tender. Fluff with a fork. |
Step 2 – Prepare the mango salsa Peel and dice mangoes. Finely chop red bell pepper and red onion. Mix all in a bowl, squeeze lime juice over, season with salt and pepper, and add chopped cilantro if using. Set aside. |
Step 3 – Cook the green beans Trim ends and steam green beans for about 5-7 minutes until tender but still crisp. Drizzle with 1 tablespoon olive oil and season with a pinch of salt. |
Step 4 – Prepare the salmon Preheat the oven to 200°C (390°F). Season salmon fillets with salt and pepper. Place on a baking sheet lined with parchment paper. Bake for 12-15 minutes until cooked through and flaky. |
Step 5 – Assemble Serve each salmon fillet with a portion of brown rice, topped with mango salsa, and a side of steamed green beans. |
